175 g (6 oz) low fat soft cheese
100 g (4 oz) Lancashire cheese, grated
100 g (4 oz) Red Windsor cheese, grated
7 tablespoons soured cream
1 tablespoon chopped chives
1 tablespoon chopped fresh coriander or parsley
freshly ground pepper
parsley to garnish
1. Place the cheeses in a bowl and mix well.
2. Add, the soured cream, chives and coriander and cream together until smooth. Season to taste.
3. Spoon into 4 ramekin dishes and chill. Serve with crisp rolls, melba toast or savoury biscuits.
