Raspberry and Walnut Swirl
225 g (8 oz) raspberries
2 tablespoons clear honey
225 g (8 oz) natural yogurt
225 g (8 oz) low fat fromage frais
50 g (2 oz) walnuts, roughly chopped
mint and raspberries for decoration
1. Lightly mash the raspberries with a fork and mix with half of each of the following ingredients, honey, yogurt and fromage frais.
2. In a separate bowl mix the remaining honey, yogurt, fromage frais and walnuts.
3. Spoon half of the raspberry mixture in the base of 4 individual dishes. Spoon over three quarters of the walnut mixture and then the remaining raspberry mixture.
4. Top with walnut mixture and swirl the mixtures together with a cocktail stick. Decorate with whole raspberries and sprigs of mint.
