1. Heat the ghee in a pan; add the next seven ingredients and saute for 1 minute. Add the ginger paste and pumpkin; stir-fry for another 2 minutes.
2. Mix in turmeric powder, dry red chillies, and salt. Add coriander powder and cook covered, on low heat, for 15 minutes or till half done.
3. Add jaggery, tamarind juice, garam masala, and green chillies. Cover and cook, on low heat, till done. Garnish with green coriander and serve.
