Papaya Chutney recipe

ingredients

300 g (11 oz) Papaya, raw, diced
4 tsp (20 ml) Vegetable oil
1 tsp (3 g) Panch phoran
1/2 cup (75 g) 2 1/2 oz Sugar
1/2 cup (60 ml) 2 fl oz Water
2 tbsp (20 g) Raisins (Jdshmish)
1/4 cup (50 ml) 1 3/4 fl oz Lemon (nimbu) juice

method

1. Heat the oil in a wok (kadhai); add panch phoran and saute for a few seconds.

2. Add papaya and saute for 4 minutes. Add sugar, water, and raisins; cook till the papaya is soft and the water is nearly dried.

3. Pour in the lemon juice, mix well and remove from heat.

4. Serve chilled.
