1. Cook the mangoes and ginger together in a clean wok (kadhai) till the water evaporates completely.
2. Add sugar and stir till it dissolves completely and the mixture thickens.
3. Add salt, garam masala, red chilli or black pepper, and acetic acid; mix well.
4. Remove the wok from the heat. Add melon seeds (optional) and mix. Add sodium benzoate and mix well.
5. Cool and fill the chutney, while still warm, in a sterilized jar. Seal the jar with a lid after it cools completely.
