Sweet Potato Fritters

ingredients

1 kg sweet potatoes
yeast batter

method

Peel and cut 1 kg sweet potatoes into 1 cm thick slices, soak in cold salted water for 15 minutes, drain and dry.

Pass through yeast batter and golden deep fry in groundnut oil; drain, season and serve.
