Braised Onions (Oiqnons Braisés) recipe

ingredients

10 x 125 g onions
25 g butter
1 litre white stock
150 g bacon rind or trimmings
70 g salt
200 ml jus lie or demi-glace

method

1. Peel the onions but do not cut the root ends too short.

2. Butter and season a braising pan, add the onions, season and three-quarters cover with the stock.

3. Cover with the bacon, greaseproof paper and a lid, bring to the boil and braise in the oven at 180°C for 1 hour.

4. Serve in a vegetable dish, coated with the brown sauce.
