Sweat 100 g chopped onion and 2 crushed cloves of garlic in 75 ml olive oil, add 225 g tomato concassée, 25 g chopped dill and 25 g chopped mint; season and cook for 5 minutes.
Add 10 small courgettes cut into 0.5 cm slices and moisten with a little water, season with salt and simmer for 10 minutes.
Allow to stand until cool then serve dome-shape in a vegetable dish. This dish may also be served warm.
