Spiced Spinach (Palak Bhaji) recipe

ingredients

1.5 kg spinach
1/2 tsp cumin
1/2 tsp ground coriander
1/4 tsp salt
50 g ghee
2 chopped cloves of garlic
2 tsp grated ginger

method

1. Mix together the cumin, ground coriander and salt.

2. Golden fry the garlic and grated ginger in the ghee, then stir in the mixed spices.

3. Add the picked spinach, moisten with a little water, cover with a lid and simmer for 5 minutes.
