Fried Baby Marrow (Courgette Frite)

ingredients

serves 10
1 kg baby marrows
500 ml milk
250 g flour salt

method

1. Dip the sliced baby marrows in milk, drain well and pass through flour. Shake off surplus flour and deep fry at 180°C for 3 minutes.

2. Drain on absorbent paper and lightly season with salt. Serve on a dish paper on a flat dish.
