20 soaked and dried red chillies
4 chopped cloves of garlic
75 g chopped shallot
75 ml groundnut oil
175 ml lemon juice
1 tsp sugar
25 ml nam pla
method
Fry 20 soaked and dried red chillies, 4 chopped cloves of garlic and 75 g chopped shallot in 75 ml groundnut oil and allow to cool. Blend to a paste with 175 ml lemon juice, 1 tsp sugar and 25 ml nam pla.
