1. Combine 600 g flaked, poached salt cod, 600 g mashed potatoes, 3 egg yolks, 50 g butter and 100 ml cream.
2. Mould into small balls, flatten to form round cakes, and mark criss-cross fashion.
3. Place into frying baskets and deep fry at 190°C until golden brown.
4. Serve garnished with lemon wedges and picked parsley.
