Salade Elana

ingredients

serves 4
1 long cucumber
1/2 lb (225 g) ripe strawberries
salt

for the dressing

2 tablespoons each olive oil and sunflower oil
juice of 1 lemon
1 good pinch Salt
1/2 teaspoon sugar

method

1. Wash and trim the cucumber and slice very thinly.

2. Arrange the cucumber on a plate in concentric circles.

3. Sprinkle with salt and leave for 10 minutes while you are doing everything else.

4. Slice the strawberries not quite so thinly, then make the dressing.

5. Whisk together the lemon juice, salt and sugar, beat in the olive oil, then the sunflower oil.

6. Pour the liquid off the cucumber - the salt will have drawn out some of the juices - and arrange the strawberries in more rings on top of the cucumber.

7. Pour the dressing over and serve immediately.
