Makke Ni Khichdi (An interesting preparation made with corn) recipe
ingredients
5 Corn (bhutta) corbs, tender, grated
2 tbsp (30 ml) 1 fl oz Vegetable oil
1/2 tsp (1 1/2 g) Mustard seeds (rai)
1/2 tsp Cumin (jeera) seeds
1/4 tsp Asafoetida (hing)
2 Green chillies, chopped
1 tsp (3 g) Sugar
Salt to taste
1/2 Juice of lemon (nimbu)
1 tbsp (4 g) Green coriander (hara dhaniya), chopped
method
1. Heat the oil in a pan; add mustard seeds, cumin seeds, asafoetida, and green chillies. Saute till the seeds crackle. Add the corn and cook on low heat for 5 minutes.
2. Add just enough water to cover the corn. Add sugar and salt. Cover and simmer till the corn is tender.
3. Add lemon juice and mix well.
4. Serve hot garnished with green coriander.
