2 cups (400 g) 14 oz Rice, Basmati, washed, soaked for 30 minutes
1 tbsp (15 ml) Vegetable oil
1 Cinnamon (dalchini), 1 inch stick
2 tbsp (40 g) 1 1/4 oz Sugar
4 cups (1 litre) 32 fl oz Water
1 tsp (4 g) Salt
2 Onions, sliced, fried
method
1. Heat the oil in a heavy-bottomed pan; add the cinnamon stick and sugar. Stir continuously, on low heat, till the sugar caramalizes (ensuring that the sugar does not burn).
2. Add water and salt. Bring the mixture to the boil. Now add the rice and cook covered, on low heat, for about 20 minutes. Serve hot garnished with fried onions.
