Nariyal Kanji (Indian Rice soup flavoured with coconut milk) recipe

Coconut milk: Grate 1 coconut and press through a muslin cloth to obtain the first (thick) extract.
If refrigerated, this can stay for up to 3 - 4 days.
ingredients
1 1/4 cups (250 g) 9 oz Broken rice, washed, drained
4 cups (1 litre) 32 fl oz Water
3/4 cup (150 ml) 5 fl oz Coconut (nariyal) milk, extract
Salt to taste
method
1. Cook the broken rice in a pot with water till it is very
soft. Keep aside.
2. Pour in the coconut milk and check for seasoning.
