12 Prawns, king-sized
2 tsp (10 ml) Lemon (nimbu) juice
2 tbsp (10 g) Sesame (til) seeds
1 cup (200 ml) 7 fl oz Vegetable oil
1 tsp Dry red chillies (sookhi lal mirch)
1 tsp (6 g) Garlic (lasan), crushed
1/2 tsp (1 g) Red chilli powder
1/2 tsp (1 g) Turmeric (haldi) powder
Salt to taste
1 tbsp (4 g) Green coriander (hara dhaniya), chopped (optional)
method
1. Wash, clean and devein the prawns. Pat them dry. Rub lemon juice onto the prawns and keep aside.
2. Coarsely grind 1 tsp sesame seeds. Put the rest aside to be used later for frying.
3. Mix the coarsely ground sesame seeds with 1 tsp oil and the rest of the ingredients to form a marinade. Coat the prawns with this marinade, cover the dish and put aside for 30 minutes.
4. Heat the oil in a frying pan till it starts smoking. Reduce heat to medium. Coat the prawns evenly with the remaining sesame seeds and deep-fry till they are crisp and golden brown.
5. Garnish with green coriander and serve hot accompanied by chilli sauce.
