1. Shred the lettuce coarsely, place with the other ingredients into a saucepan and bring to the boil.
2. Cover with buttered greaseproof paper and a lid and braise in the oven at 180°C for 30 minutes.
3. Lightly thicken the liquid by adding knobs of butter or beurre manie, removing the pan from the heat and shaking to mix in and serve.
