100 g goose fat or lard
1.5 kg sauerkraut
675 g quartered apples
1 tsp caraway seeds
coarsely ground black pepper
method
1. Melt 100 g goose fat or lard in a pan, add 1.5 kg sauerkraut and stir over heat for 2 - 3 minutes.
2. Cover with boiling water, add 675 g quartered apples and season with 1 tsp caraway seeds and coarsely ground black pepper. Cover with a lid and cook at 180°C for 1 hour.
