ingredients

asparagus
grated Parmesan cheese
melted butter
nut-brown butter

method

Arrange cooked asparagus in a buttered earthenware dish.

Season, sprinkle with finely grated Parmesan cheese and melted butter and gratinate under a salamander grill.

When lightly coloured, finish with nut-brown butter.
