1. Mix 1/2 tsp each of cumin powder, coriander powder and turmeric, 1/4 tsp chilli powder and salt.
2. Golden fry 100 g chopped onion in 50 ml oil or ghee, add 2 crushed cloves of garlic and 1 tsp grated root ginger, then stir in the mixed spices and cook for a few moments.
3. Add 2 kg boiled spinach and 50 ml water, cover with lid and simmer for 5 minutes. Drain off the surplus liquid and serve.
