4 pork loin chops, 2.5 cm (1 inch) thick
for the stuffing
1 onion, chopped
1 tbsp (1/2 oz) butter
1/2 cup (3 oz) 90 g cooked brown rice
1/3 cup (60 g) 2 oz dried apricots, finely chopped
1 good pinch salt
freshly ground black pepper to taste
basting mixture
1 tbsp cooking oil
4 tsp lemon juice
2 tsp dried or 2 tbsp chopped fresh sage
method
to prepare the stuffing
1. Saute onion in heated butter in a heavy-based saucepan until translucent. Add remaining ingredients and leave to cool.
2. Prepare the basting mixture by mixing all the ingredients together.
to prepare the meat
1. Trim off excess fat according to preference. Cut a pocket in each chop, fill with a little stuffing and secure with a cocktail stick.
2. Cook chops 10 cm (4 inches) under a pre-heated grill for 5 to 7 minutes in total (medium) or 7 to 10 minutes in total (well-done), basting frequently with basting mixture.
3. Season with salt and pepper and serve.
