Wash and scrape 1 kg new potatoes, rewash, place into a pan of boiling salted water, reboil and skim. Boil steadily for 10 minutes or until soft when pierced with the point of a knife. Drain and serve in a vegetable dish.
Note
Instead of scraping off the skins, new potatoes can be boiled as they are, then peeled while still hot, replacing them in a pan of hot water as done.
