Peas and Chorizo Sausage (Ervilhas à Portuguesa) recipe
ingredients
100 g chopped onion
2 cloves of chopped garlic
50 ml oil
250 g diced tomato flesh
sprig of thyme
chopped parsley
1.5 kg boiled and drained peas
fried eggs
sliced chorizo sausage
strips of smoked ham
method
1. Sauté 100 g chopped onion and 2 cloves of chopped garlic in 50 ml oil; add 250 g diced tomato flesh, a sprig of thyme and chopped parsley.
2. Serve 1.5 kg boiled and drained peas with fried eggs on top, garnish with sliced chorizo sausage and strips of smoked ham and surround with the tomato mixture.
