6 pork chump chops
salt and freshly ground black pepper to taste
for the marinade
1 clove garlic, crushed
2 tbsp chopped fresh ginger root
1 tbsp soft brown sugar
1 tbsp cooking oil
1 tbsp soy sauce
5 tbsp dry white wine
method
1. First prepare the marinade by mixing all the ingredients together.
2. Place meat in marinade and marinate for 3 to 4 hours.
3. Remove from marinade and pat dry with paper towels.
4. Cook meat 10 cm (4 inches) under a pre-heated grill for 5 to 7 minutes in total (medium) or 7 to 10 minutes in total (well-done), basting frequently with marinade.
5. Season meat with salt and pepper and serve.
