1.5 kg okras
25 g ghee
100 g sliced onion
4 fresh green chillies
2 sliced cloves of garlic
20 g grated ginger
1/2 tsp turmeric
1/2 tsp ground coriander
1/2 tsp cumin
225 ml coconut milk
salt
method
1. Trim the okras and wash in cold water.
2. Golden fry the onion, garlic, ginger and deseeded and sliced chillies in the ghee. Stir in the turmeric and continue to fry for a few moments.
3. Add the okras, coriander, cumin, coconut milk and salt and simmer uncovered for 10 minutes.
