Egg Mayonnaise (Mayonnaise d'Oeufs)

ingredients

5 hard-boiled eggs
1/4 finely shredded lettuce
200 ml mayonnaise
5 fillets of anchovy
10 capers
5 stoned olives
5 cucumber slices
2 tomatoes, either sliced or in wedges

method

1. Cut the eggs into halves or quarters lengthways and place round side upwards on the shredded lettuce.

2. Coat with the mayonnaise and decorate with thin strips of anchovies trellis-fashion, capers, olives, cucumber and tomato.
