Open oysters and release the flesh where it is joined to the bottom shell. Serve on crushed ice, accompanied with brown bread and butter and segments of lemon. Shallot sauce, which consists of chopped shallots, vinegar, pepper from the mill and Tabasco, is sometimes served as an accompaniment.
