method
1. Sift 375 g wholemeal flour and 125 g strong white flour and mix in 250 ml warm water to make a fairly soft dough.
2. Knead for 15 minutes, then leave to relax for 30 minutes.
3. Knead again, mould into balls and flatten, then roll out into 15 cm rounds, stretching them well.
4. Cook quickly on both sides on a hot griddle.
