Baked Herring in Cream (Forshmak)

ingredients

herring
chopped onion
breadcrumbs soaked in milk
grated apple
cream
seasoning.
grated nutmeg
zest of lemon
butter

method

Combine finely minced, raw fillets of herring with lightly sauteed chopped onion, breadcrumbs soaked in milk and squeezed out, grated apple, cream and seasoning.

Place into a shallow dish, sprinkle with breadcrumbs, grated nutmeg, zest of lemon and butter and bake for 30 minutes.
