method
1. Shell and devein 20 king prawns, make an incision along the back and marinate for 15 minutes in 50 ml sake or dry sherry, 50 ml light soy sauce, crushed clove of garlic, 1 tsp grated root ginger, and salt.
2. Pass the prawns through cornflour, eggwash and breadcrumbs and golden deep fry in groundnut oil.
3. Garnish with segments of lemon and accompany with chilli sauce.
