Grilled Skewered Prawns and Scallops with Mango Sauce (USA)

ingredients

serves 10
20 scallops
600 g prawns
200 g mango flesh
50 ml olive oil
50 ml lime juice

method

1. Marinate 20 scallops and 600 g prawns in a liquidised blend of 200 g mango flesh, 50 ml olive oil and 50 ml lime juice.

2. Skewer cooked snow peas with the prawns and scallops and grill.

3. Boil the strained marinade, thicken with diluted arrowroot to a sauce consistency, season and serve in sauceboats.
