method
1. Whisk together 4 eggs, 300 ml milk, 225 g flour and 1/2 tsp salt to form a batter and make into blintzes (pancakes).
2. Combine 225 g cottage cheese, 1 beaten egg yolk, 50 g sugar, 50 g raisins and the grated zest and juice of 1 lemon.
3. Spread on the blintzes, roll up to seal then lightly fry in butter.
3. Serve accompanied by soured cream mixed with sugar and cinnamon.
