Of the many varieties of this important herb, garden and lemon thyme are the most common. Thyme has a distinctive flavour and is one of the classic ingredients in a bouquet garni. It can be rubbed over beef and lamb before roasting, and used to flavour casseroles, soups, stuffings, bread sauce, carrots, onions and mushrooms. Lemon thyme is especially good in stuffings, and in fish dishes. Thyme is also used to flavour oils and vinegars.
