Fennel resembles dill and is a member of the same family, but it has a sweet anise flavour, which is quite different. Both the feathery leaves and seeds are used. It is a classical flavouring for fish -especially oily fish as it counteracts the richness. Fennel also works well in marinades, soups and vegetable dishes.
