This fragrant hardy annual is grown for its feathery leaves (also known as dill weed) and for its seeds, which are dried and used as a spice. Dill leaves have a slightly sharp, yet sweet flavour which complements fish and shellfish dishes perfectly and it is the classic flavouring in gravad lax (Scandinavian smoked salmon). Dill is also added to salads, omelettes, chicken dishes and used as a garnish.
