Glossary

Elastin is the yellow connective tissue found in meat. Only a small amount of elastin is found in muscle fibres and is always accompanied by large quantities of collagen. Elastin is tough and must be removed before cooking as it is not broken down when cooked using a moist-heat cooking method.
