A cow's milk cheese from Denmark that is light yellow in color with a semi-soft and slightly rubbery texture and a mild flavor. It has a yellow rind and is produced in rectangular shapes that are often coated with wax. Sometimes the cheese is flavored with caraway. Danbo cheese is used for sandwiches, snacks, hors d'oeuvres, and grilling.
