Chukamilo

information

Chukamilo is a lemon concentrate used when nibua and gal-gal, large oblong lemons grown in Nepal and Himachal Pradesh in India respectively, are not available. About 5 litres / 40 fl oz of juice is extracted from the lemons and boiled in an iron / steel pan. It is stirred occasionally till the juice is reduced to a light brown, honey-like consistency. When cool, store in a glass jar. Dilute the concentrate in a little water before using.
