Bicarbonate of soda

information

Also known as baking soda or sodium bicarbonate, bicarbonate of soda is one of the main ingredients in ready-mixed baking powder, it gives off the gas carbon dioxide when it is heated in conjunction with other ingredients. Bicarbonate of soda can be mixed with cream of tartar to form a raising agent.

Uses:

Bicarbonate of soda can be used in scone, cake, pudding, biscuit and batter recipes. The amount of baking soda required will differ depending on the recipe. To make your own baking powder use 1 part of baking soda to 2 parts of cream of tartar.

To store:

Keep in a cool, dry place. Always use a dry spoon when measuring bicarbonate of soda and replace the lid immediately after use.
