A rather thin, creamy mixture consisting mainly of eggs, plain flour and milk. Seasoning may also be added. When frying or baking, some meat cuts and other foods are dipped into a batter, breadcrumbs or flour to protect them from the high temperature of the cooking oil.

Batter

125 g (4 oz) plain flour
1 tsp baking powder
good pinch salt
125 ml (4 fl oz) milk
2 eggs, beaten
125 ml (4 fl oz) water
2 tbsp melted butter

Sift dry ingredients together and add remaining ingredients. Allow to stand for 30 minutes before using.
