Chicken in a Brick with Rosemary and Mushrooms 

Seasoned whole chicken stuffed with garlic, rosemary and orange and oven-baked with mushrooms and mustard.

Boned Highland Chicken 

Baked and boned chicken with a stuffing of oatmeal, parsley, vegetables, lemon and stock.

Basque Chicken 

Whole chicken pieces fried with onion, garlic, tomato, green pepper, chicken stock, seasoned and simmered for 30 minutes then spiced up with paprika. Served with rice.

Chicken in Tarragon Sauce 

A small whole chicken cooked with garlic, bay leaves, lemon, white wine, vinegar, pepper, tarragon and olives.

Fried and casseroled whole chicken with wine, garlic, mushrooms, onions, carrots, herbs and pickling onions. Traditionally made with a mature cockerel in which case, allow at least 4 hours' cooking time. A French classic; serve with boiled rice.

Chicken and Rice Salad 

Light and simple rice salad made using whole chicken, mushrooms, peppers, lemon juice, garlic and celery.

Chicken Garam Masala 

A curry-style recipe using chicken joints with onions, garlic, ginger, cumin, coriander, turmeric, chilli powder, tomatoes and garam masala.

Green Curry Coconut Chicken 

A curried recipe for whole chicken simmered with coconut milk, stock and lime. Cooked with a delicious paste of coriander seeds, caraway seeds, chillies, sugar, salt, lemon grass, ginger, garlic, shallots, shrimp paste, coriander, mint, nutmeg. Also combines sweet potatoes, squash and beans.

Chicken Hotpot 

A traditional English Hotpot recipe with chicken, potatoes, leeks, butter beans, chicken stock, Dijon mustard, tomato puree and parsley.

Chicken Pot au Feu 

Whole chicken pieces, liver and heart cooked with sauerkraut, carrots, onions, bay leaf, juniper berries and tomatoes in a seasoned chicken stock. Served with warm French bread.

Chicken Boiled with Beans 

An easy whole chicken recipe with haricot beans, onion, garlic, bay leaf, tarragon, tomatoes and seasoning.
