Creole Jambalaya 

Seasoned whole chicken and gammon with garlic, onion, peppers, tomatoes, stock, cayenne pepper, saffron, sausage, ham, and lobster. Served with rice.

Chicken Bearnaise 

An elaborate whole chicken dish with ham, sausage meat, dried bread, various vegetables (onions, carrots, celeriac, leeks, cabbage, french/green beans), garlic and herbs.

Chicken a la King (Chef's version) 

Sauted mushrooms combined with capsicum, lemon juice, milk and stock, then seasoned and cooked further with prepared chicken meat cooked from a simple recipe of onion, carrot, celery, bouquet garnic. Thickened towards the end with egg yolks and cream, and served with rice.

Barbecued Spiced Chicken 

Whole chicken pieces marinated with garlic, ginger, lemongrass, chili, soy sauce, hoisin sauce and chicken stock, fried in a wok, moved to the barbecue and served with onions and the marinade.

Chicken and Turnip Stew 

Whole chicken pieces with a vegetable stew of peppercorns, carrot, celeriac, leek, onion, turnips, shallots, parsley and seasoning all served with rye bread.

Honey Glazed Chicken 

Chicken brushed with honey, mustard, curry powder and salt and roasted to a crisp and brown finish. Served with peanut rice or chips and fresh salad.

Coq au Vin #2 

French dish using whole chicken pieces cooked and served with a recipe of onions, garlic, carrots, bay leaf, thyme, parsley, red wine and mushrooms.

Basque Chicken 

Whole chicken pieces fried with onion, garlic, tomato, green pepper, chicken stock, seasoned and simmered for 30 minutes then spiced up with paprika. Served with rice.

Coq au Riesling 

Whole chicken pieces, cooked with shallots, garlic, tarragon, herbs, wine and stock. Served with a mushroom and soured cream sauce. A delicious recipe variation on the classic French dish Coq au Vin.

Bon-bon Chicken with Spicy Sesame 

Boiled chicken covered with a delicious sauce made from a recipe of light soy sauce, sugar, spring onions, red chili oil, Szechuan peppercorns, white sesame seeds and sesame paste.

French Roast Chicken 

Roast chicken and giblets with mixed herbs, button, stock and served with buttered new potatoes and green beans or roast potatoes and carrots.
