Chicken with Tangerine Peel 

Seasoned chicken pieces marinaded in soy sauce, sherry and onion, deep-fried until golden and crisp. The chicken is then cooked with some fried pepper, peppercorns and crushed tangerine rind in vinegar and finally served with spring onions.

Chicken with Thyme 

Whole chicken stuffed with a recipe of leek, parsley, thyme, seasoning, egg and milk-soaked wheat. The skin is then rubbed with thyme and seasoning and the chicken is roasted and basted until ready.

Chicken with Turmeric 

Chicken pieces tossed with a rich oriental recipe of garlic, macadamia nuts, onion, lengkuas, lemon grass, terasi, turmeric and tamarind juice, and cooked in coconut milk and coconut cream. Served with deep-fried onions.

Chicken, Ham and Broccoli Stir-fry 

An old English recipe of whole chicken boiled with spring onions and ginger, cut into pieces and combined with honey-roast ham and broccoli. Served with some thickened chicken stock.

Seasoned whole chicken casseroled with cider and onion, served with mushrooms and stock.

Marinaded roasted chicken using a recipe of yogurt, garlic, ginger, dried chillies, turmeric, mixed spice, mint, cumin seeds and seasoning.

Whole chicken pieces, cooked with shallots, garlic, tarragon, herbs, wine and stock. Served with a mushroom and soured cream sauce. A delicious recipe variation on the classic French dish Coq au Vin.

French dish using whole chicken pieces cooked and served with a recipe of onions, garlic, carrots, bay leaf, thyme, parsley, red wine and mushrooms.

Coq Au Vin (Chicken in Red Wine) 

Fried and casseroled whole chicken with wine, garlic, mushrooms, onions, carrots, herbs and pickling onions. Traditionally made with a mature cockerel in which case, allow at least 4 hours' cooking time. A French classic; serve with boiled rice.

Seasoned whole chicken and gammon with garlic, onion, peppers, tomatoes, stock, cayenne pepper, saffron, sausage, ham, and lobster. Served with rice.

Curried Chicken 

A very basic chicken curry recipe using garlic, curry paste, powder, chicken stock or stock cube, coconut milk, lemon juice. and seasoning.

Curried Chicken Pilaff 

Roasted and seasoned whole chicken covered and cooked with bacon rashers, combined with a rice casserole with onion, leek, curry powder, sultanas and chicken stock.

Deep Fried Chicken 

A great easy recipe for deep fried chicken pieces in seasoned batter.

Deep Fried Soy Chicken 

Chicken pieces marinaded with a recipe of soy sauce, sherry, sugar, ginger, lemon and parsley, then deep-fried until crisp and brown.

Double Garlic Chicken 

Garlic-rubbed whole chicken, packed under the skin with a mixture of garlic, low-fat cheese, chives and parsley, then stuffed with garlic, grapes and rosemary. The chicken is then placed in a roasting tin and with sliced of garlic and rosemary tucked between the legs and wings, then seasoned and dotted with butter before being roasted. Drunken Chicken 

Whole chicken stuffed with ginger and spring onion cooked and coated with a sherry, brandy and stock sauce, then refrigerated for 2 or 3 days (to become drunk of course!).

Farmhouse Favourite 

A Farmhouse pie-style recipe using mashed potatoes with butter, egg, and seasoning, baked lightly in a deep baking dish to create a casing. This is then filled with diced chicken, mushrooms, egg, chives and a cheese sauce and baked until ready. Served with bacon rolls, tomato, egg, parsley and watercress.

Fowl Pie 

A Fowl Pie recipe filled with fowl, onions, celery, mace, thyme, parsley, salt and peppercorns, hard-boiled egg and ham.

Fowl Pudding 

A suet pudding recipe filled with fowl, onion, garlic, seasoning and parsley, some stock and a bay leaf.
