Chicken with Tangerine Peel 

Seasoned chicken pieces marinaded in soy sauce, sherry and onion, deep-fried until golden and crisp. The chicken is then cooked with some fried pepper, peppercorns and crushed tangerine rind in vinegar and finally served with spring onions.

Deep Fried Soy Chicken 

Chicken pieces marinaded with a recipe of soy sauce, sherry, sugar, ginger, lemon and parsley, then deep-fried until crisp and brown.

Chicken with Cold Nut Sauce 

Roasted chicken stuffed with curry powder, paprika, white pepper and salt, and served with a walnut sauce.

Honey Glazed Chicken

Coq au Riesling 

Whole chicken pieces, cooked with shallots, garlic, tarragon, herbs, wine and stock. Served with a mushroom and soured cream sauce. A delicious recipe variation on the classic French dish Coq au Vin.

Chicken Bearnaise 

An elaborate whole chicken dish with ham, sausage meat, dried bread, various vegetables (onions, carrots, celeriac, leeks, cabbage, french/green beans), garlic and herbs.

Chicken Masala 

Whole chickens coated with an exquisite masala paste of ginger, garlic, salt, cardamon, cinnamon, cayenne pepper and lemon juice, and a coat of yogurt, almond, sultana and butter before being oven-roasted. Served with paprika or saffron-infused rice.

Chicken Grand-Mere 

A traditional baked whole chicken recipe with bacon, butter, potatoes and onions. The bird is stuffed with a sausage & herb stuffing made from onion, sausage meat, chicken liver, soft breadcrumbs, parsley, rosemary and thyme.

Chicken in Apricot Sauce 

Pieces of whole chicken pan-fried and combined with a sauce made from apricot halves, onion, sugar, flour, salt and pepper. Served with boiled rice or mash potatoes, and salad.

Chicken with Anchovy Mayonnaise 

Chicken boiled and poached with basil, parsley, vegetables, bay leaf and clove, and served with a flavorful mayonnaise of anchovies, capers, gherkin, tuna, lemon juice, parsley and seasoning.

Chicken Bourguignon 

Roasted whole chicken stuffed with mixed spice and herbs, seasoned and covered with bacon rashers, served with a flavorsome wine sauce made using giblets, mushrooms and onion.

Oriental Chicken and Mushroom Stew 

Chicken with potato, tofu and various vegetables; mushrooms, bean sprouts, carrots, and mangetout. Ladled with a soy sauce and sherry chicken stock.

Aromatic Chicken from Madura 

A hob-casserole recipe using chicken quarters covered with ginger, onion, lightly fried spices and sugar. Cooked in a stock from the leftover chicken and served with rice and deep fried onions.
