Many famous recipes use an inexpensive cut of meat, sometimes referred to as stewing steak or stewing beef. These include; chuck steak, blade steak, topside steak, silverside steak, shin steak, flank steak and thick skirt steak. They are mostly suited to slow cooking. Brown stews are made with pieces of cubed red meat that are seared or browned before adding any liquid, and then simmered gently until tender.
