Tome Cheese
Tome Is the name given to the various small cheeses produced during the summer months in Savoie. They are mostly from skimmed cows' milk.
Tome au Raisin is ripened in a mixture of grape skins, pips and stalks to give the cheese its distinctive flavour.
Tome de Savoie is cylindrical in shape and has a pleasant, light flavour resembling Saint Paulin.
