Pimentos (also called Capsicums or Sweet Peppers)
To Skin Pimentos
Peel the pimentos 1) using a potato peeler, 2) by immersing in hot deep fat for 1 minute, 3) by holding in a gas flame until the skin blisters and blackens, 4) by blanching in boiling water for 1 minute, enclosing tightly in a plastic bag for a little while, then opening and pulling the skin away. Cut off the top with the stalk and empty out the seeds.
