Mozzarella, An Italian cheese, pale coloured and egg shaped. When fresh, it is very soft, dripping with buttermilk. Traditionally made from buffalo milk, it is now more often made from cows' milk. Mozzarella should be eaten fresh, as once the buttermilk has drained away the cheese dries out and becomes stodgy. Available only from specialist Continental shops. It is uninteresting to eat raw, but is splendid for pizzas, lasagnes, and other Italian dishes. Bel Paese may be used as a substitute.
