Brie is a soft-textured farm cheese, produced in the north of France. It is made from whole milk and is mould-inoculated. Brie is flat and round, usually 35 cm (14 in) in diameter and about 2.6 kg (6 Ib) in weight; it has a white floury crust instead of the more usual hard rind. It should be eaten fresh when soft all through. It doesn't keep well.
